Pogi Kimchi is traditionally made during a yearly event called Kimjang, a collective family and neighborhood gathering where large amounts of Pogi kimchi is made to last families throughout the cold winter months with their favorite kimchi. Traditionally Koreans prep for this event all year round; starting in spring they procure shrimp, anchovy and other seafood for fermenting, either drying them or fermenting them for the autumn festivities. In the early summer, sea salt is collected and in the late summer, red chili peppers are harvested, dried and ground for the paste. By the time November comes around and it’s Napa cabbage season, all ingredients have been harvested and prepared to create delicious kimchi for the winter months. Kimjang is an important event for Korean culture and kimchi, and in 2013 it was registered in UNESCO’s list of Intangible Cultural Heritage of Humanity. This event is more than just food and survival to Koreans, it reaffirms Korean identity and strengthens family cooperation and neighborly bonds. Celebrating the relationship between food and culture, Kimjang is an important reminder that human communities need to live in harmony with nature.
