We use Riesling wine to honor the ancient origins of Sauerkraut. The first sauerkraut was in China using rice wine! Sauerkraut was introduced to Europe by the Huns when they came on horseback and became a staple in German cuisine when they combined salt and water with their cabbage to harness the dance of lactic acid fermentation.
